Tony Briglio grew up in Brooklyn. Italian family, big tables, food that meant something. He learned early that cooking is how you show people you care about them.

When he landed in Maine and discovered BBQ, something clicked. Smoke, time, fire, patience. The same values his family cooked with, just with a different fuel source.

Roadside BBQ started the way all the best things do: cooking for friends and family, watching people go quiet when they took the first bite. The trailer came next. Then the weddings, birthdays, and corporate gigs. Word travels fast when the brisket is that good.

Tony runs every cook personally. The rub, the smoke time, the sauce. Nothing leaves the trailer that he wouldn't serve at his own table.
